Founder/Cidermaker

With a degree in Molecular Biology from Western Washington University and a passion for fermentation, Nic headed to Colorado with a desire to get into brewing. Shortly after arriving, Nic found himself in the Colorado wine industry helping grow Colorado’s largest winery; Carboy Winery. Since moving back to his roots in the PNW, Nic has stayed heavily involved in the Oregon wine industry as well as the growing cider industry of Colorado. Emergent Cider Company came from Nic’s desire to produce a cider label worthy of converting beer and wine drinkers to the complexity and diversity of cider. Branding was inspired by growing up with yearly family vacations to the cabin on the coast.

Outside of cider Nic’s activities involve exploring nature, seeking out the perfect craft cocktail, and hitting the ponds in the fall to duck hunt.

Cellar Dog

Ziggy was rescued in April of 2021 by Nic and Ashley and couldn’t be more thrilled to be apart of the Carter Family. Ziggy loves playing chase, playing with his uncle dog “Cody”, and ripping out those pesky squeakers from his favorite toys.
